Composition :
• Ammonium sulfate, 96,35 %
• Thiamin, 0,35 %
Characteristics :
• Thiamin, a growth factor, noticeably activates fermentation
• It’s addition to juice reduces the production of pyruvic acid, thus decreasing SO2 binding;
• Ammonium sulfate supplements nitrogen availability, which is often low in grapes from dry climates, or in grapes suffering from botrytis
Activateur S increases the ability of the juice to ferment under most conditions
By allowing a decrease in the SO2 dosage during the crushing operation, malolactic fermentation takes place more easily and oxidation is reduced.
Like all living organisms, yeasts require nitrogen for multiplication. Availability of the nitrogen provides for fast multiplication and hence accelerates the fermentation to completion. This reduces the amount of VA’s being formed during alcoholic fermentation. This is more pronounced in juices with high sugar contents, or from grapes with botrytis.
• Botrytis grapes : in this case, a fast fermentation allows earlier separation of juice and stems, reducing the risk of oxidation and retaining maximum aromatic
components;
• Stuck fermentations : addition of Activateur S and an alcohol tolerant yeast is
highly recommended.
