Properties :
The sterols and unsaturated fatty acids contributed by Genesis Native (NATSTEP process) are essential elements of the yeast membrane having an effect on membrane fluidity and permeability. Those yeast cells with the highest sterol levels will maintain their fermentation activity longer. Moreover, the sterols and unsaturated fatty acids used by the yeast improve fermentation kinetics.
In addition, Oenofrance has worked on yeast products (OF process) in order to ensure the bioavailability of certain compounds, which are involved in numerous stress response mechanisms (lack of nitrogen, high temperatures,...).
These compounds contribute to the integrity of the cell structure, particularly mitochondrial and membrane integrity. They are essential for yeast growth and sporulation.
These cell protectors, as well as the vitamins and minerals released by Genesis Native into the re-hydration medium, are assimilated by the yeasts whose
volume increases by 50% during this phase. The cell protectors will be partially transferred to subsequent generations, thus giving them the ability to survive in increasingly harsher conditions.
The use of Genesis Native during re-hydration:
• allows for a better yeast adaptation to the must thanks to better resistance to the osmotic shock and the native flora during yeast inoculation,
• ensures a better yeast resistance to alcohol,
• enables complete fermentations with a low production of volatile acidity,
• leads to a reduction of alcoholic fermentation durations, specifically during the final stage,
• lowers the risk of native flora development.
Genesis Native is a fermentation protector which acts essentially at the level of the membrane integrity, thus ensuring better yeast viability and activity until the end of the alcoholic fermentation, while contributing only little available nitrogen. Thus, it remains necessary to manage the nitrogen needs of the yeast by assessing the amount of available nitrogen found in the musts and adjust it with suitable activators where applicable (Activateur S, DAP, ammonium sulphate…)
