Genesis Prime
Oenofrance yeast product suited for all wines : a real tool to monitore your batonnage.
Oenofrance worked over 10 years with professor Michel Feuillat and his team from the well known University Jules Guyot (Dijon-France) over the yeast products and their multiple potential applications in winemaking. The fruit of this knowledge is the Genesis line of products which is centered around the various identified and controlled properties of those yeast products.
Our knowledge about the different yeast product fractions, about the specificities of the studied strain, and about the management of the production processes permits Oenofrance to elaborate a new product which suits to the market demands.
Genesis Prime is based on a selection of yeast hulls from a yeast strain Saccharomyces cerevisiae which contains a high level of cell wall polysaccharides (mannoproteins and glycoproteins). Thanks to a prior treatment, most of those mannoproteins becomes soluble, a remaining fraction requires a longer contact with the wine in order to be released.
Used during ageing, Genesis Prime has also an effect on the wine oxido- reduction potential. This ageing adjuvant reduces the oxidation or reduction consequences that a wine may undergo during its elaboration.
