Œnococcus œni bacteria resistant to difficult conditions : low pH, high alcohol.
Expertise Extrême is a malolactic inoculation kit, which contains selected and lyophilized Oenococcus oeni bacteria as well as a specific activator. The combined utilization of the activator and the bacteria in accordance with a simple acclimatization protocol called 1-Step®, which was developed by Lallemand, allows to conduct malolactic fermentations under extreme pH and alcohol conditions.

Properties:
The bacterial strain of the Expertise Extrême kit has been chosen by Oenofrance for its fermentative and organoleptic qualities during a selection program. Its capacity to acclimatize to extreme conditions is improved by its production process and the 1- Step® acclimatization protocol. Indeed, combined with the activator of the Expertise Extrême kit during an acclimatization phase of about twenty hours, the bacteria adapt to the specific conditions of the wine to be inoculated. Thanks to this step, the bacteria inoculated are fully active, which favours their implantation and the onset of the malolactic fermentation, with a shorter lag phase compared with a direct inoculation.
The bacteria of the Expertise Extrême kit:
• Rapidly establish themselves with a high survival rate after inoculation
• Tolerate up to 15 % alc. (vol) if the pH is favourable.
• Tolerate pH values down to 3.1
• Respect the fruity character of wines
