Œnococcus œni seeding bacteri for optimizemalolactic fermentation process of high quality wines
Œnococcus œni lactic bacteria derived from selection work by ITV France (Ref. 04A1) carried out from a panel of red wines form various French regions. The purpose of this research program was to select bacteria demonstrating high
performance enological activity under difficult conditions by developing their qualitative organoleptic expressions.

Properties :
• Fast implanting following direct seeding
• Priority degradation of the malic acid with very low production of biogenic amines
• Respect for vine-plant aromas with a prevalent « red fruit » expression, without any dominant lactic notes.
