Properties :
The aromatic compounds (nerol, geraniol, linalol, … ) are found in the bound terpenes and represent a potential reserve to increase the aroma of wines, the extent of which will depend on the cultivar, degree of maturity and winemaking conditions.
At the end of alcoholic fermentation, the free terpene fraction contributes to the wine’s aroma, but the bound fraction has no influence on the senses.
The ß-glucosidase activity of Expression20 releases these bound terpenes, increasing the expression and richness of the wine aroma.
These secondary activities are not very concentrated, which allow to control better the expression of aromas, without going too far.
Application :
ß-glucosidase competes with glucose and can be inhibited if the glucose content is too high. It is recommended to use Expression20 in new, still fermenting wines with a residual sugar content below 10 g/l.
