Thanks to its collateral activities, Enzym’Must facilitates the clarification and settling of problem juices, coming from thick skin and dense pulp varieties or intense pressings. This new formulation, with a new dosage (3 to 4mL/hL) is more effective during settling.

Characteristics :
Enzym’Must is a liquid pectolitic preparation with cellulase, hemicellulase and glucanase
collateral activities.
Polygalacturonase activities > 8 000 nanokatals/g.
Properties and applications :
- Some varieties (like Ugni Blanc, Melon on some years, or some Alsacian varieties) give juices difficult to settle. With this type of raw material, the pectolytic activities are not sufficient to obtain a good clarification. Cellulase, hemicellulase and glucanase activities are necessary. By « unhooking » the polysaccharides from the pectin chains, they prevent them from hindering must settling.
- Enzym’Must also allows the clarification of juices coming from intense pressing.
