Flocculating strain intended for bottle fermentations.
Ability to produce strong tirage starters.

 

The Levuline AGGLO strain was part of a research collaboration between the CIVC (Comité Interprofessionnel du Vin de Champagne) and Oenofrance.
This collaboration had the following objectives:
- to study the performance of new flocculating strains selected by CIVC,
- to assess optimum starter culture conditions,
- to elaborate a simple and reliable technique to evaluate flocculating yeast populations in solution


 

Specific properties of the CIVC 8020 strain :

 
- Strain strictly intended for bottle fermentations
- Strong flocculation
- Ability to produce strong tirage starters

Instructions :

 
Levuline AGGLO is always used as a tirage starter.
The following propagation protocol has to be strictly respected.
In order to successfully inoculate the base wine and avoid sulfur notes, the base wine has to meet the following requirements:
- total SO2 50 mg/l
- free SO2 10 mg/l
- alcohol 11,7 % vol.
Nitrogen addition (10g/hL of Activateur Boland) will also limit the risks of sulfur notes.
 

Assessment of the tirage starter population :

 
The yeast in all starters has to be properly enumerated before utilisation in order to ensure their vitality and the correct inoculation rate for bottle fermentations.
- take a representative sample during agitation
- break the yeast flocs with EDTA or dish washer while stirring
- grind with a tissue homogenizer
- dilute 1:10
- enumerate yeast cells with a yeast counting chamber.
We recommend to inoculate with an initial yeast population of 5-8 x 105 CFU/ml. Do not
exceed 106 CFU/ml.
